Now, will you just look at THAT! I don't think I've ever cooked a prettier plate of food in my life.
I've recently pick up the Clean & Lean Diet book by James Duigan and I've been really enjoying eating a more balanced and healthy diet. I decided to go ahead and try to create my own recipe based on the mantras I picked up from the book and I came up with this zucchini "pasta" and homemade meatballs! I have to say, it was delicious! I was expecting it to be edible when I was finished, but I definitely didn't expect it to be as yummy as it was! I also made the sauce myself. I think that if you have a hand blender at home, there really is no reason to buy ready made sauces, which we all know are full of preservatives! So here's my recipe!
For the sauce:
1 can of chopped tomatoes
salt, pepper and seasoning to taste (I used italian herbs and paprika!)
Simply blend everything together using a hand blender and heat up in a small saucepan.
For the meatballs:
500g lean beef mince
some grated parmesan
salt, pepper and seasoning to taste
Just mix it all together in a bowl and shape the meatballs with your hands!
For the zucchini "pasta":
I used a vegetable peeler to make the long strands of zucchini, then wilted it down on the frying pan with a little olive oil for 3-4mins.
And that is it! I love that I can whip up this delicious meal in under 30 minutes and it's still super healthy and super yummy! Let me know what you think and if you decide to try it out at home! x
